【王子煮場】西班牙伊比利亞火腿鵝油意粉 跟另一半一起幸福肥吧

西班牙國寶級火腿 iberico ham

iberico ham(伊比利亞火腿)被美譽為「西班牙國寶」,無論豬隻產區、血統、飼養面積、育肥時間、熟成時間均有嚴格標準。

iberico ham只選用生長於法定產區—伊比利亞黑毛豬的美腿醃製,豬隻天天吃橡果而且講究血統純正,火腿等級分為50%、75%、100%純種豬肉,級數遠遠拋棄香港人熟悉的Parma Ham(巴馬火腿)。

伊比利亞火腿鵝油意粉—材料及調味

伊比利亞火腿、意大利闊麵、鵝油香蔥、火山鹽(或一般)、帕瑪森芝士(或你喜愛的芝士)

Method

Boil some water in a pan and add a generous amount of salt and some olive oil. Cook the pasta until al dente.

Drain the pasta and in a frying pan ?? add some goose fat. Fry the pasta with goose fat for a minute or so adding a dash of pasta water if necessary.

Plate the pasta and add parmigiana-reggiano or Parmesan cheese on top then add some good quality salt on top of that.

Lastly nicely surround the pasta with iberico ham. Serve!!!!

Tips

•PS Bottles goose fat can be bought at high end supermarkets

•PPS Be flexible with your pasta choice but note the nature and hardness/softness when cooking them

•PPPS Do not heat or cook the ham, this will spoil it
