一支骨 麥香排骨王


這一次選用有骨的加厚骨(皇帝骨)來製作,效果不錯,不油膩,肉質酥軟不粘骨,口感十足!

醃料:

1. Guinness Malta(非酒精麥芽飲料)…….50ml
2. 薑汁 …………………1茶匙
3. 麻油 …………………1茶匙
4. 生抽/醬油 ……….1茶匙
5. 紹興花雕酒……..1湯匙
6. LP急汁(李派林醬汁)…….2湯匙
7. 鮑魚汁………………2茶匙
8. 蜀粉/麵粉………..6湯匙

材料:

加厚骨……………………1kg

汁料:

Guinness Malta……….300毫升
LP急汁(李派林醬汁)………4湯匙
水………………………………4湯匙
油………………………………3湯匙
檸檬

做法:

1. 加厚骨加入醃料4小時或至隔夜。
2. 熱油,將肉炸至金黃色撈起,備用。加厚骨在炸的時候不適宜大火以及炸太久,不然,肉質會變硬,影響口感。
4. 將排骨回鑊,澆酒,炒勻,盛起,轉入煲中,將調味料加入上項材料中,煮至滾,
5. 改用慢火煮一小時又45分鐘,炆至材料夠酥稔及汁濃。
6. 熱1湯匙油,倒入檸檬汁,汁料,煮滾至濃稠(出泡泡)。
7. 倒入炸好的加厚骨,兜抄至每片肉都粘汁,即可盛出上碟,供食

Malta Pork Rib King

Marinade spices for pork ribs:
1.Guinness Malta (non-alcoholic malt drink) – 50ml
2. Ginger juice – 1 teaspoon
3. Sesame oil – 1 teaspoon
4. soy sauce / soy sauce – 1 teaspoon
5. Shaoxing Huadiao Wine – 1 tbsp
6.Lea and Perrins worcester sauce – 2 tbsp
7. 2 teaspoons of abalone sauce
8. Corn flour- 6 tablespoons

Ingredientsl:

Pork ribse – 1kg

Gravy:

Guinness Malta – 300 ml
LP Instant Juice (Li Pai Lin Sauce) – 4 tbsp
Water – 4 tbsp
Oil – 3 tbsp
Lemon 1 tbsp

Method:

1. Marinated pork ribs with spice for 4 hours or until overnight.
2. Hot oil, fry the meat until golden brown. (Do not grill pork ribs for too long, otherwise, it will harden.)
4. Put the ribs to the wok, pour the wine, stir, simmer, transfer to the pot, add the seasoning to the above materials, cook until rolled,
5. Change to slow fire for one hour and 45 minutes, until the material is crispy and thick.
6. Heat 1 tbsp of oil, pour in lemon juice, juice, and boil until thick (bubble).
7. Pour the fried thick bones and copy them to each piece of meat to stick the juice, then you can put on the saucer and serve.
